Preheat oven to 375 degrees Fahrenheit.

Remove the skin from the salmon and cut into cube sizes. Wash and cut the zucchini, bell peppers, and onion.

Add the salmon, zucchini, bell peppers, and onion to a sheet pan. Add avocado oil and seasonings. Combine and transfer to the oven and bake for 20-25 minutes or until fully baked.

Allow to cool, then add to glass meal prep containers. You may serve the baked salmon and veggies with cooked rice. Store the glass containers in the fridge for 3-4 days.
